Plum Couscous Bowl – A Taste of Autumn in a Bowl

Instructions

  1. Place the couscous in a bowl and pour over the hot water or vegetable broth. Cover and let it sit for about 5 minutes.
  2. Fluff the couscous with a fork and mix in 1 tbsp of olive oil to prevent it from sticking.
  3. Add the quartered plums to a pan over medium heat with a splash of water and a pinch of cinnamon.
  4. Cook for about 5 minutes until they soften and release their juices.
  5. Wash the fresh spinach and drain well. You can optionally warm it slightly in a pan if you prefer it wilted.
  6. In a small bowl, mix the lemon juice, maple syrup, cinnamon, olive oil, salt, and pepper until smooth.
  7. Divide the couscous between two bowls as the base.
  8. Arrange the stewed plums and fresh spinach on top. Sprinkle with roasted almonds and drizzle with the cinnamon-lemon dressing.
  9. Enjoy the bowl immediately and let the autumnal flavors delight your taste buds!
