Grilled Peaches with Balsamic and Basil – A Taste of Summer

Sometimes, the simplest recipes make the biggest impression. Grilled peaches with balsamic and basil are the perfect example of this. The natural sweetness of the peaches is intensified by grilling, the balsamic reduction adds a pleasant tang, and the fresh basil provides a fragrant finishing touch. This dish is incredibly versatile: it works wonderfully as a light appetizer, a side dish, or even part of a dessert when paired with vegan ice cream.

Not only is this recipe delicious, but it’s also quick to prepare – ideal for spontaneous summer evenings or a last-minute treat for guests.

  1. Cut the peaches in half and remove the pits. Lightly grease the grill or grill pan with olive oil and preheat to medium heat.
  2. Place the peach halves cut-side down on the hot grill. Grill for about 3–4 minutes until the peaches develop soft grill marks and begin to caramelize slightly.
  3. Heat the balsamic vinegar in a small saucepan over medium heat. Optionally, add the maple syrup and let the mixture simmer gently until it reduces by about half and thickens into a syrup-like consistency.
  4. Arrange the grilled peaches on a serving plate. Drizzle with the balsamic reduction and garnish with fresh basil leaves.
  5. Best enjoyed immediately while the peaches are still warm.

Tips

  • For a savory twist, sprinkle the peaches with some vegan cheese (e.g., almond feta).
  • This recipe also works wonderfully as a dessert – simply pair it with vegan vanilla ice cream!
  • You can also use nectarines instead of peaches for a slightly different flavor.
