Mediterranean Couscous Salad – Light, Fresh, and Full of Flavor

Summer is here, and there’s nothing better than a light, refreshing salad that transports you straight to the Mediterranean. This Mediterranean Couscous Salad is not only easy to make but also incredibly versatile. With a base of fluffy couscous, juicy cherry tomatoes, crunchy cucumbers, and aromatic herbs like parsley and mint, it’s the perfect dish for warm days.

Instructions

  1. Place the couscous in a bowl and pour over the hot vegetable broth. Cover and let it sit for about 5 minutes. Fluff the couscous with a fork and set aside.
  2. Halve the cherry tomatoes, dice the cucumber, slice the olives, and finely chop the onion. Finely chop the parsley and mint as well.
  3. In a small bowl, whisk together the lemon juice, olive oil, Dijon mustard, minced garlic, salt, and pepper until well combined.
  4. Add the couscous to a large bowl and mix in the prepared vegetables (tomatoes, cucumber, olives, onion) and herbs. Pour the dressing over the salad and mix thoroughly.
  5. Let the salad sit for a few minutes to allow the flavors to meld together. Garnish with additional fresh herbs or a splash of lemon juice if desired, and enjoy!
