Raw Vegan Cheesecake with fresh Strawberries

Instructions

  1. Place the almonds or walnuts, dates and coconut oil in a blender or food processor. Blend until a sticky mixture forms. Press the mixture evenly into the bottom of a springform lined with parchment paper, and refrigerate.
  2. Add the soaked and drained cashews, coconut milk, maple syrup, lemon juice, vanilla extract, and coconut oil to a blender. Blend until smooth and creamy. If the mixture is too thick, add 1–2 tbsp of water.
  3. Pour the cashew cream over the prepared base and smooth it out. Place the springform in the refrigerator for at least 4 hours (or overnight) to set.
  4. Shortly before serving, slice the fresh strawberries. If they are not sweet enough, you can toss them with 1–2 tbsp of maple syrup.
  5. Arrange the strawberries evenly on top of the cheesecake. For an extra shine, you can brush the strawberries with a little maple syrup.
  6. Release the cheesecake from the springform, slice it into pieces, and enjoy!
