Fluffy Vegan Easter Rolls – A Delight Without Sugar!

These Easter rolls are wonderfully fluffy, lightly sweetened with natural ingredients like applesauce, and simply perfect for your Easter brunch. They’re completely vegan, sugar-free, and incredibly versatile – whether enjoyed plain, with jam, plant-based spreads, or even with savory toppings. Thanks to their soft texture and pleasant flavor, they’re a hit on any Easter table and are loved by kids too.   1. Stir the dry yeast into the lukewarm oat milk and let it sit for 5 minutes until bubbles form. (If using fresh yeast, dissolve it in the milk.)
  2. In a large bowl, combine the flour, salt, and (optional) cinnamon.
  3. Add the applesauce, melted coconut oil, and vanilla extract.
  4. Pour in the yeast mixture and knead everything into a smooth dough (about 5–7 minutes). The dough should be soft and elastic but not sticky. If needed, add a little more flour.
  5. Cover the dough with a clean kitchen towel and let it rise in a warm place for about 1 hour, or until it doubles in size.
  6. Transfer the dough to a floured surface and knead briefly. If desired, incorporate raisins or chopped almonds.
  7. Divide the dough into 10 equal portions and shape them into small balls.
  8. Place the balls on a baking sheet lined with parchment paper and cover. Let them rise again for another 20 minutes.
  9. Brush the rolls with oat milk to give them a shiny finish.
  10. Preheat the oven to 180°C (350°F) top/bottom heat (160°C fan).
  11. Bake the rolls in the preheated oven for about 20–25 minutes, until golden brown.
  12. Remove the rolls from the oven and let them cool on a wire rack before serving.

  1. Extra sweetness: If desired, add 1–2 tbsp of maple syrup or agave syrup.
  2. Glaze: For a festive touch, brush the rolls with melted coconut oil after baking and sprinkle with chopped almonds or rolled oats.
  3. Spices: Add cardamom, nutmeg, or lemon zest for extra flavor.
  4. Savory version: Omit the applesauce and vanilla, and add herbs (e.g., rosemary or thyme) for a savory variation.
