Vegan Baked Donuts with Dark Chocolate Glaze and Pistachio Topping

Topped with a rich dark chocolate glaze and crunchy pistachios, they’re a true showstopper – perfect for any occasion, whether as dessert, with coffee, or just as a sweet treat in between.

Instructions

  1. Preheat the oven to 180 °C (350 °F) and lightly grease a donut pan.
  2. In a large bowl, mix the flour, baking powder, baking soda, and salt.
  3. In a separate bowl, whisk together the plant-based yogurt, maple syrup, plant-based milk, melted coconut oil, and vanilla extract.
  4. Add the wet ingredients to the dry ingredients and gently mix until a smooth batter forms. Avoid overmixing to keep the donuts light and fluffy.
  5. Fill the donut molds about 3/4 full with the batter.
  6. Bake in the preheated oven for about 12–15 minutes, or until the donuts are lightly golden brown. Use a toothpick to check if they’re done. Allow the donuts to cool completely.
  7. Melt the dark chocolate and coconut oil together in a heatproof bowl over a pot of simmering water (double boiler). Stir until smooth and glossy.
  8. Dip the cooled donuts into the chocolate glaze, coating the tops evenly.
  9. While the glaze is still wet, sprinkle the chopped pistachios generously over the donuts.
  10. Place the donuts on parchment paper and allow the glaze to set (you can refrigerate them for quicker results).
  11. Arrange the donuts on a platter and enjoy – perfect for any occasion!
