- 2 tablespoon olive oil (for frying)
Instructions
- Rinse the quinoa under running water and cook it according to the package instructions in double the amount of water. Let it cool slightly afterward.
- Mix the ground flaxseeds with 5 tablespoons of water and let the mixture sit for about 5 minutes until it becomes gel-like. This serves as a plant-based egg substitute.
- In a large bowl, combine the cooked quinoa, grated carrot, spring onions, oats, flaxseed egg, garlic, paprika powder, cumin, salt, pepper, and herbs. Mix everything well until a moldable dough forms. If the dough is too moist, you can add more oats.
- Shape the dough into small, flat patties (about 5 cm in diameter).
- Heat the olive oil in a pan over medium heat. Fry the patties on both sides until golden brown, about 3–4 minutes per side.
- Let the patties drain briefly on a paper towel to remove excess oil. Serve them warm or cold with your favorite dip, as a side dish, or in a bowl.
