- 1/2 red onion (finely chopped)
- 1 bunch cilantro (chopped)
- Salt and pepper (to taste)
- 3 tablespoon olive oil
- Juice of 1 lemon
- 1 teaspoon maple syrup
- 1 teaspoon Dijon mustard
Instructions
- Cook the quinoa according to the package instructions and let it cool slightly. In a large bowl, gently combine the quinoa, diced avocado, spinach, tomatoes, chopped red onion, and cilantro.
- In a small bowl, whisk together the olive oil, lemon juice, maple syrup, Dijon mustard, salt, and pepper until smooth.
