Red Cabbage and Orange Salad with Pomegranate Seeds

Ingredients
- ½ red cabbage (head approx. 400g thinly sliced)
- 2 oranges (peeled and segmented)
- ½ pomegranate (seeds extracted)
- 1 small red onion (thinly sliced into rings)
- 1 handful walnuts (roughly chopped)
- 2 tablespoons olive oil
- 1 tablespoons apple cider vinegar or white wine vinegar
- 1 tablespoons maple syrup
- fresh herbs (optional)
Instructions
- Thinly slice the red cabbage and place it in a large bowl. For a softer texture, gently knead the cabbage with your hands to tenderize it.
- Peel the oranges and slice them into thin segments. Remove the seeds from the pomegranate. These fruity ingredients give the salad a unique touch and plenty of freshness.
- Slice the red onion into fine rings and add them to the red cabbage along with the chopped walnuts.
- In a small bowl, mix olive oil, apple cider vinegar, and maple syrup for the dressing. Season with salt and pepper, and stir well.
- Pour the dressing over the red cabbage mixture and toss everything well. Gently fold in the orange segments and pomegranate seeds at the end to avoid crushing them.
- Arrange the salad on plates and garnish with fresh thyme or parsley if desired.
