Chocolate-Date Cookies – Vegan & Sugar-Free

When the weather gets colder and the first festive scents fill the air, it’s time for healthy, chocolatey treats. These chocolate-date cookies are the perfect sugar-free alternative to traditional Christmas cookies. Their natural sweetness comes from dates, and unsweetened cocoa powder provides a rich chocolate flavor.   1. Soak the dates in hot water for about 10 minutes to soften them. Drain and blend them in a food processor or mixer until a sticky paste forms.
  2. Transfer the date paste to a bowl and mix in the melted coconut oil, cocoa powder, and vanilla extract. Combine well. Add the oats and, if desired, the chopped nuts, and knead everything into a uniform dough. If the dough is too soft, add more oats.
  3. Shape the dough into small balls and gently flatten them into cookie shapes. Place the cookies on a baking tray lined with parchment paper.
  4. Bake the cookies in a preheated oven at 180 °C (top/bottom heat) for about 10–12 minutes. Let them cool on a wire rack after baking.
  5. The chocolate-date cookies are now ready to enjoy! Stored in an airtight container, they stay moist and delicious for several days.
