Instructions
- Peel the beetroot and cook it in water until soft (approx. 30–40 minutes). Alternatively, you can use pre-cooked beetroot. Once cooked, dice it into small pieces.
- Place the diced beetroot, basil, cashew nuts, garlic, lemon juice, and olive oil in a blender or food processor. Season with salt and pepper.
- Blend all the ingredients into a smooth paste. If the pesto is too thick, you can adjust the consistency by adding a bit more olive oil or a splash of water.
- Cook the pasta al dente. Mix it with the beetroot pesto and top it with vegan Parmesan or nutritional yeast as desired.
