The winter season offers us an abundance of fresh vegetables that can be transformed into a wonderfully light yet satisfying winter salad.
This vegan recipe combines hearty flavors with a fresh crunch—a true delight for the palate that is not only healthy, but also brings winter to your plate.
Ingredients
- 200g spinach, washed and roughly chopped (or other salad of your choice)
- 1 red onion, thinly sliced into rings
- 1 pomegranate, seeds removed
- 1 sweet apple, thinly sliced
- 1 red bell pepper, sliced
- 50g walnuts, roughly chopped
- 2 large tomatoes, sliced
- 2 tbsp pumpkin seed oil
- Juice of 1 lemon
- Salt and pepper to taste
- Herbs of your choice
Preparation
- Prepare spinach: Wash the spinach and chop the leaves roughly. Place the spinach in a large bowl with pumpkin seed oil, lemon juice, salt, and pepper, and mix well.
- Add ingredients: Add the onion rings, pomegranate seeds, tomato slices, bell pepper slices, apple slices, and chopped walnuts to the spinach.
- Mix everything: Gently toss the ingredients until all components are evenly distributed.
- Let it sit: Let the winter salad sit for about 15 minutes to allow the flavors to unfold.
