Summer is in full swing, and with it comes the time when we crave light, refreshing dishes. What could be better than a delicious cucumber salad?
Today, I’ll share a recipe for a refreshing and vitamin-rich cucumber salad that will make your taste buds dance. Let’s celebrate summer together and be enchanted by the fresh lightness of this salad!
Ingredients
- 2 large cucumbers
- 1 medium red onion
- 1 bunch of fresh dill leaves
- 2 tablespoons olive oil
- 2 tablespoons white wine vinegar or apple cider vinegar
- 1 teaspoon maple syrup (or another sweetener of your choice)
- Salt and freshly ground pepper to taste
Instructions
- Start by thoroughly washing the cucumbers under cold water and trimming the ends. Depending on your preference, you can use the cucumbers peeled or unpeeled. Next, slice the cucumbers into thin rounds or use a spiralizer for a unique look.
- Peel and thinly slice the red onion. If the raw onion flavor is too intense for you, you can soak the onion rings in cold water for about 10 minutes to mellow the sharpness.
- Wash the fresh dill thoroughly and chop it roughly. Dill adds a delightful aroma to the salad, complementing the freshness of the cucumbers.
- In a small bowl, prepare the dressing by mixing olive oil, white wine vinegar or apple cider vinegar, and maple syrup. Alternatively, you can use lemon juice for a slightly citrusy note.
- Place the cucumbers, onion rings, and dill in a large salad bowl and pour the dressing over them. Mix everything well to allow the flavors to unfold. Season with salt and pepper.
- Let the cucumber salad marinate in the refrigerator for at least 15-20 minutes before serving. This enhances the flavor, and the salad remains cool and refreshing.
The fresh taste of dill and the gentle sweetness of the dressing perfectly complement the crisp bite of the cucumbers. This salad is an ideal accompaniment to grilled vegetables, vegan burgers, or as a refreshing snack in between. Enjoy!
