Brownies are among my absolute favorites when it comes to sweets. But how about a healthier version that still delivers the intense chocolate flavor?
Here, I share with you one of my favorite recipes for homemade, vegan, sugar-free brownies that will delight you with their juicy consistency and delicious taste.
Dry Ingredients
- 180g grated zucchini
- 100g oat flour (oats ground in a blender)
- 70g ground almonds
- 40g cocoa powder
Wet Ingredients (for blending)
- 250g soft dates
- 250ml plant-based milk
- 2 tsp flaxseeds
- ½ tsp baking soda
Instructions
- Preheat the oven to 180°C (convection) and line a baking dish with parchment paper.
- Combine dry ingredients: Put the grated zucchini, oat flour, ground almonds, and cocoa in a bowl and mix everything. If desired, you can now add nuts, chocolate chips, or dried fruits and fold them in gently.
- Blend wet ingredients: Put the dates, plant-based milk, flaxseeds, and baking soda in a blender and blend everything well until a homogeneous mass is formed.
- Mix wet and dry ingredients: Combine wet and dry ingredients and mix into a thick batter.
- Pour batter into the baking dish: Pour the batter into the prepared baking dish and smooth the surface.
- Bake: Bake the brownies in the preheated oven for about 20-25 minutes until they are firm. Be careful not to bake them for too long to keep them nice and juicy.
- Allow to cool and enjoy: Let the brownies cool slightly in the dish before gently removing them. Cut them into squares and serve as a delicious snack or dessert.
