Who says indulging must always be unhealthy? Today, I present to you a recipe for crispy and delicious sugar-free oat cookies.
These little treats are super simple and quick to make.
Ingredients
- 200g rolled oats
- 100g pitted dates, roughly chopped
- 2 ripe bananas, mashed
- 1 tsp cinnamon
- 1 tsp vanilla extract
- 30g chopped nuts (e.g., almonds or walnuts, optional)
- 30g raisins (optional)
Instructions
- Preheat Oven: Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
- Prepare Dates: If your dates are not soft and sticky, you can soak them in warm water for about 15 minutes until soft. Then, drain and roughly chop.
- Mix Banana and Dates: In a large bowl, mash the bananas with a fork into a uniform paste. Add the chopped dates and mix well.
- Add Dry Ingredients: Add the rolled oats, cinnamon, and vanilla extract to the banana-date mixture. If using nuts and raisins, add them as well.
- Shape Cookies: With clean hands, shape the dough into small cookies and place them on the prepared baking sheet. Gently flatten them to achieve the desired cookie shape.
- Bake: Bake the cookies in the preheated oven for about 15-20 minutes or until golden brown.
- Cool: Remove the cookies from the oven and let them cool completely on a rack.
These sugar-free oat cookies are a healthy yet delicious treat. The natural sweetness from bananas and dates gives them a delightful taste, while the oats provide fiber and sustained energy.
