Tropical Temptation – Coconut Smoothie Bowl!

    As the weather gets warmer, and the sun greets us with its full strength, it’s time to indulge in refreshing and exotic delights. And what could be more fitting for summer than a tropical treat?

    This creamy bowl is a perfect way to start the day. With the natural sweetness of the fruits and the delicious coconut, this bowl is not only a delight for the palate but also a true vitamin bomb.

    Ingredients for the Coconut Smoothie Bowl

    For the Smoothie

    • 1 frozen banana
    • 100g frozen pineapple chunks
    • 100ml coconut milk (from the can)
    • 50ml plant-based milk (e.g., almond milk, oat milk, or soy milk)
    • 1 tbsp almond butter (or another nut butter of choice)
    • 1 tsp maple syrup or another sweetener of your choice (optional)
    • A pinch of ground vanilla

    For the Topping

    • Coconut chips
    • Chia seeds
    • Chopped nuts (e.g., almonds, cashews)
    • Fresh mint

    Instructions

    1. In a high-powered blender, add the frozen banana, frozen pineapple, coconut milk, plant-based milk, almond butter, maple syrup (if used), and ground vanilla.
    2. Blend everything on high speed until you get a creamy and smooth smoothie. If the smoothie is too thick, you can add a bit more plant-based milk until the desired consistency is reached.
    3. Pour the smoothie into a bowl.
    4. Top the Coconut Smoothie Bowl as desired with fresh berries, coconut chips, chia seeds, chopped nuts, and some fresh mint leaves for an extra burst of freshness.
