Ingredients
- 1 kg waxy potatoes, peeled and thinly sliced
- 1 onion, finely chopped
- 3 garlic cloves, pressed
- 500ml plant-based cream (e.g., oat or soy cream)
- 200ml plant-based milk (e.g., almond or oat milk)
- 3 tbsp nutritional yeast
- 2 tbsp potato starch
- 2 tsp mustard
- Salt and pepper to taste
- A pinch of nutmeg Fresh herbs (e.g., thyme or rosemary) for garnish
Instructions
- Preheat the oven: Preheat the oven to 200°C.
- Prepare potatoes: Peel and thinly slice the potatoes.
- Prepare the sauce: In a saucepan, sauté onions and garlic in a bit of oil until translucent. Then add plant-based cream, plant-based milk, nutritional yeast, potato starch, mustard, salt, pepper, and nutmeg. Stir well and let it simmer until the sauce thickens.
- Layer: In a greased baking dish, layer potato slices and the sauce alternately. Finish with a layer of sauce.
- Bake: Cover the baking dish and bake for approximately 40-50 minutes. Then remove the cover and bake for an additional 10-15 minutes until the surface is golden brown.
