Hearty Delight – Vegan Potato Gratin!

    Today, I’m taking you into the world of savory delight with a classic that will not only fill you up but also make you happy: Vegan Potato Gratin! It combines the creaminess of potatoes with a savory, plant-based twist.

    Ingredients

    • 1 kg waxy potatoes, peeled and thinly sliced
    • 1 onion, finely chopped
    • 3 garlic cloves, pressed
    • 500ml plant-based cream (e.g., oat or soy cream)
    • 200ml plant-based milk (e.g., almond or oat milk)
    • 3 tbsp nutritional yeast
    • 2 tbsp potato starch
    • 2 tsp mustard
    • Salt and pepper to taste
    • A pinch of nutmeg Fresh herbs (e.g., thyme or rosemary) for garnish

    Instructions

    1. Preheat the oven: Preheat the oven to 200°C.
    2. Prepare potatoes: Peel and thinly slice the potatoes.
    3. Prepare the sauce: In a saucepan, sauté onions and garlic in a bit of oil until translucent. Then add plant-based cream, plant-based milk, nutritional yeast, potato starch, mustard, salt, pepper, and nutmeg. Stir well and let it simmer until the sauce thickens.
    4. Layer: In a greased baking dish, layer potato slices and the sauce alternately. Finish with a layer of sauce.
    5. Bake: Cover the baking dish and bake for approximately 40-50 minutes. Then remove the cover and bake for an additional 10-15 minutes until the surface is golden brown.
    6. Garnish: Garnish with fresh herbs and let it rest briefly before serving.
    7. Enjoy: Bring vegan potato gratin to the table and savor the hearty delight to the fullest!
