Crispy Cauliflower Balls with Avocado Dip

    Today, I have a recipe that will make the hearts of those seeking healthy and delicious treats skip a beat: Vegan Cauliflower Balls.
    These little wonders made from cauliflower and spices are a true feast for the senses, proving that healthy eating and enjoyment can go hand in hand.

    Ingredients

    For the Cauliflower Balls

    • 1 small cauliflower, divided into florets
    • 120g chickpea flour
    • 2 garlic cloves, minced
    • 1 tsp cumin
    • 1 tsp Paprika powder
    • 1/2 tsp turmeric
    • Salt and pepper to taste
    • Fresh parsley, finely chopped
    • 2 tbsp olive oil (for greasing the baking sheet)

    For the Avocado Dip

    • 1 ripe avocado
    • Juice of one lemon
    • A handful of fresh cilantro, chopped
    • Salt and pepper to taste

    Instructions

    1. Prepare Cauliflower: Place cauliflower in a blender and pulse until it reaches a rice-like consistency. Transfer to a large bowl.
    2. Make the Dough: Add chickpea flour, minced garlic, cumin, paprika, turmeric, salt, pepper, and chopped parsley. Mix well until a moldable dough forms.
    3. Shape Balls: Form small balls from the dough and place them on an olive oil-greased baking sheet.
    4. Bake: Bake the cauliflower balls in a preheated oven at 180°C (356°F) for about 25–30 minutes until golden brown and crispy.
    5. Prepare Avocado Dip: In a separate bowl, puree the avocado flesh with lemon juice, chopped cilantro, salt, and pepper.
    6. Serve: Serve the crispy cauliflower balls with the creamy avocado dip and enjoy.
