Light Delight: Vegan Cheesecake with a Skyr Alternative

It’s dairy-free, refined sugar-free, and packed with flavor. The light and tangy Skyr alternative combines with a nutty crust to create a dessert that’s both indulgent and wholesome.

Ingredients

For the crust

  • 150 gram oats (finely ground or oat flour)
  • 80 gram almonds (or other nuts, ground)
  • 3 tablespoon coconut oil (melted)
  • 2 tablespoon date paste (or soaked dates, blended)

For the filling

Instructions

  1. Grind the oats and nuts finely in a food processor. Add coconut oil and date paste, and process into a sticky dough. Add more date paste if the dough is too dry. Press the dough firmly into a 18 cm springform pan to form a solid base. Place it in the refrigerator to chill while you prepare the filling.
  2. Combine the vegan Skyr, silken tofu, lemon juice, maple syrup (if using), cornstarch, and vanilla extract in a blender or food processor. Blend until smooth and creamy.
  3. Pour the filling over the prepared crust and spread it out evenly. Smooth the surface with a spatula.
  4. Preheat the oven to 160 °C (320 °F). Bake the cheesecake for 40–45 minutes. The center may still jiggle slightly when done; it will firm up as it cools.
  5. Let the cheesecake cool completely at room temperature, then refrigerate for at least 4 hours or overnight to set.
