Ingredients
- 1 can (400 g) chickpeas (rinsed and drained)
- 200 gram peanut butter
- 50 milliliter maple syrup (or agave syrup)
- 1 teaspoon baking powder
- 50 gram chocolate chips (vegan)
Instructions
- Rinse and drain the chickpeas thoroughly to remove excess starch. This step ensures the cookies have a better texture.
- Add the chickpeas, peanut butter, maple syrup, and baking powder to a high-speed blender or food processor. Blend until a smooth dough forms.
- Transfer the dough to a bowl and gently fold in the chocolate chips to create the perfect balance of peanut butter and chocolatey sweetness.
- Use a tablespoon to scoop small portions of the dough onto a baking sheet lined with parchment paper. Flatten slightly with the back of the spoon. Bake in a preheated oven at 180°C (350°F) for about 12–15 minutes, until golden brown.
- Remove the cookies from the oven and let them cool completely on the baking sheet. They will firm up as they cool.
