Almond-Choco-Caramel Cookies – Indulgence Without Compromise

These Almond-Choco-Caramel Cookies are the perfect snack when you’re craving something sweet that’s healthy, vegan, and free from refined sugar. The base of almond butter, date paste, and cocoa powder creates a delicious combination of chocolate and caramel, while chopped almonds as a topping add the perfect crunch.

  1. Combine almond butter, date paste, cocoa powder, oat flour, and vanilla extract in a bowl. Mix well. If the dough feels too dry, gradually add water until it reaches a moldable consistency.
  2. Divide the dough into about 10 equal portions, roll them into balls, flatten slightly, and place them on a baking sheet lined with parchment paper.
  3. Evenly sprinkle the chopped almonds over the cookies and press them in lightly.
  4. Bake in a preheated oven at 180 °C (350 °F) for about 12–15 minutes, until the cookies are slightly firm.
  5. Remove the cookies from the oven and let them cool completely on a wire rack. This will make them perfectly crispy.

  • Extra Sweetness: Add a handful of vegan chocolate chips to the dough.
  • Variation: Swap the chopped almonds for hazelnuts or shredded coconut.
  • Storage: Keep the cookies in an airtight container for up to 5 days – if they last that long! 😉
