Crispy Cauliflower Bites with Avocado Dip

Ingredients
For the cauliflower bites
- 1 smal cauliflower (cut into florets)
- 120 gram chickpea flour
- 2 garlic cloves (minced)
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon turmeric
- Salt and pepper (to taste)
- Fresh parsley (finely chopped)
- 2 tablespoon olive oil (for greasing the baking tray)
For the avocado dip
- 1 ripe avocado
- Juice of 1 lemon
- A handful of fresh coriander (chopped)
- Salt and pepper (to taste)
Instructions
- Place the cauliflower florets in a blender and pulse until it resembles rice. Transfer to a large mixing bowl.
- Add the chickpea flour, minced garlic, cumin, paprika, turmeric, salt, pepper, and chopped parsley to the bowl. Mix well until a moldable dough forms.
- Shape the dough into small balls and place them on a baking tray greased with olive oil.
- Preheat the oven to 180°C (350°F) and bake the cauliflower bites for about 25–30 minutes until golden and crispy.
- In a separate bowl, mash the avocado flesh with lemon juice, chopped coriander, salt, and pepper until smooth.
