Pea and Mint Soup – Fresh, Light, and Full of Flavor

Sometimes it’s the simple things that surprise us the most. This pea and mint soup is a wonderful example. It combines the natural sweetness of peas with the refreshing note of mint into a silky, light soup that’s perfect for any season. Whether as a starter, a light lunch, or part of an elegant dinner – this soup always impresses.

Why Peas and Mint?

Peas are rich in fiber, protein, and essential nutrients like Vitamin K, C, and folate. Mint adds a refreshing touch that perfectly complements the sweetness of the peas. Together, they create a soup that is not only delicious but also healthy.

  1. Heat the olive oil in a pot and sauté the onion and garlic over medium heat until translucent.
  2. Add the peas and vegetable broth. Let everything simmer for about 10 minutes until the peas are tender.
  3. Just before blending, add the mint leaves to the soup. This keeps the mint fresh and aromatic.
  4. Blend the soup with an immersion blender or in a regular blender until smooth. For an extra creamy texture, you can strain the soup through a sieve.
  5. Stir in the plant-based cream and gently heat the soup without boiling it. Season with salt, pepper, and a splash of lemon juice.
  6. Pour the soup into bowls and garnish with a mint leaf or a swirl of plant-based cream. Freshly baked bread pairs perfectly with it.

Notes

Tips for Variations:

  • For more protein: Add 50 g of tofu or white beans before blending.
  • For extra freshness: Garnish the soup with some lemon zest.
  • For a cold version: This soup is also delicious served cold – perfect for warm days!
