Mini Quinoa Patties – Perfect as a Snack or Side Dish

  1. Rinse the quinoa under running water and cook it according to the package instructions in double the amount of water. Let it cool slightly afterward.
  2. Mix the ground flaxseeds with 5 tablespoons of water and let the mixture sit for about 5 minutes until it becomes gel-like. This serves as a plant-based egg substitute.
  3. In a large bowl, combine the cooked quinoa, grated carrot, spring onions, oats, flaxseed egg, garlic, paprika powder, cumin, salt, pepper, and herbs. Mix everything well until a moldable dough forms. If the dough is too moist, you can add more oats.
  4. Shape the dough into small, flat patties (about 5 cm in diameter).
  5. Heat the olive oil in a pan over medium heat. Fry the patties on both sides until golden brown, about 3–4 minutes per side.
  6. Let the patties drain briefly on a paper towel to remove excess oil. Serve them warm or cold with your favorite dip, as a side dish, or in a bowl.
