  3. Blend all the ingredients into a smooth paste. If the pesto is too thick, you can adjust the consistency by adding a bit more olive oil or a splash of water.
  4. Cook the pasta al dente. Mix it with the beetroot pesto and top it with vegan Parmesan or nutritional yeast as desired.
