  • Instructions

    1. Wash and dry the fresh spinach. Place it in a large salad bowl.
    2. Add the diced persimmons and sliced avocado to the spinach.
    3. Toast the coarsely chopped walnuts in a dry pan until golden brown. Sprinkle over the salad.
    4. In a small bowl, combine the lime juice, maple syrup, Dijon mustard, salt, and pepper.
    5. Pour the dressing over the salad and gently toss everything to coat the ingredients well.
    6. If desired, garnish the salad with freshly chopped cilantro.
