Red Cabbage and Orange Salad with Pomegranate Seeds

Winter brings us delightful ingredients like red cabbage, oranges, and pomegranates – the perfect combination for a refreshing and nutrient-packed salad. This red cabbage and orange salad with pomegranate seeds adds a splash of color to the cold season and serves as a wonderful side dish or light main course. Red cabbage provides plenty of vitamins and antioxidants, while oranges bring a fruity flavor, and pomegranate seeds add a touch of tartness.

Red cabbage is high in vitamins C and K, pomegranate seeds are rich in antioxidants, and oranges provide valuable vitamins – a perfect mix for winter wellness.

  1. Thinly slice the red cabbage and place it in a large bowl. For a softer texture, gently knead the cabbage with your hands to tenderize it.
  2. Peel the oranges and slice them into thin segments. Remove the seeds from the pomegranate. These fruity ingredients give the salad a unique touch and plenty of freshness.
  3. Slice the red onion into fine rings and add them to the red cabbage along with the chopped walnuts.
  4. In a small bowl, mix olive oil, apple cider vinegar, and maple syrup for the dressing. Season with salt and pepper, and stir well.
  5. Pour the dressing over the red cabbage mixture and toss everything well. Gently fold in the orange segments and pomegranate seeds at the end to avoid crushing them.
  6. Arrange the salad on plates and garnish with fresh thyme or parsley if desired.
