Green Diversity – Zucchini Noodles with Avocado Sauce!

    Have you ever tried noodles made from zucchini? Paired with a creamy avocado sauce, you get a delicious dish that not only tastes great, but is also rich in nutrients.
    Here, I’ll show you how to prepare zucchini noodles with avocado sauce for a light yet satisfying meal.

    Ingredients

    • 2 medium-sized zucchinis
    • 1 ripe avocado
    • Juice of half a lemon
    • 2 cloves of garlic, chopped
    • A handful of fresh basil
    • 2 tbsp olive oil
    • Salt and pepper to taste

    Instructions

    1. Trim the ends of the zucchinis and use a spiralizer or julienne slicer to cut them into long, thin strips, creating zucchini noodles.
    2. Halve the avocado, remove the pit, and scoop out the flesh from the skin with a spoon.
    3. Place the avocado in a bowl and mash it with a fork or puree it in a blender.
    4. Add lemon juice, chopped garlic, olive oil, salt, and pepper to the avocado, and mix well or blend again until a creamy sauce is formed.
    5. Roughly chop the fresh basil and add it to the avocado sauce. Mix well again.
    6. I prefer to eat the zucchini noodles raw, but if that’s not your preference, you can sauté them in a pan with some olive oil for about 3-5 minutes until they become slightly tender.
    7. Make sure they remain al dente. Combine the zucchini noodles with the avocado sauce until all noodles are well coated.
    8. Garnish as desired, serve & enjoy!

    The combination of zucchini noodles and avocado is not only low in calories but also rich in nutrients. Zucchini provides fiber, vitamins, and minerals, while avocado delivers healthy fats, fiber, and essential nutrients like Vitamin K and E. The creamy avocado sauce adds a delightful flavor to the dish, while the zucchini noodles make for an ideal alternative to heavy pasta.
